Candy Melts®, candy wafers, chocolate coating, almond bark—they’re all products made for dipping, molding, and coating without needing to temper chocolate. I’ll call them candy wafers here, but if you see them sold under another name, don’t be alarmed. They’ll all work just the same.

How do you melt wafers?

Can I use regular chocolate instead of candy melts?
It’s less expensive. They don’t taste the difference. But we do! So pick up a white chocolate bar or two (we like Lindt (photo #2) and Green & Black’s), melt, and stir in drops of green food color instead.

Can you bake with melting wafers?
They’re perfect for melting as a coating because they don’t contain stabilizers. Wafers are fantastic for unbaked goodies like ganache, puddings, frostings, and coating around candies. Unlike baking chocolate, I don’t recommend wafers for actual baked recipes. You want to reach for chocolate that is made for baking.
